Christmas Fruit Cake Recipe

TIMINGS:
Prep Time: 30 mins.
Cook Time: 3 hours.
Chill Time: 30 mins.
Total Time: 4 hours.

SERVINGS:
15 - 20 people.

INGREDIENTS:

The Fruit Cake:-
• 1 cup (225g/8 oz) Unsalted Butter (room temperature).
• 1 cup (225g/8 oz) Dark Brown Sugar.
• 2 ¼ cups + 2 tbsp (350g/12 oz) Sultanas.
• 2 ¼ cups + 2 tbsp (350g/12 oz) Mixed Fruit.
• ½ cup (100g/4 ½ oz) Gláce Cherries.
• 6 tbsps (100ml/3 fl oz) Whiskey/Brandy.
• 1 Orange - Zest and Juice.
• 4 Eggs (medium).
• 1 cup + 1 tbsp (100g/3 ½ oz) Ground Almonds.
• 1 cup (100g/3 ½ oz) Almonds & Hazelnuts (chopped or whole).
• 1¼ cups + 2 tbsps (225g/8 oz) Plain Flour.
• 1 tsp Mixed Spice.
• 3 tbsps Whiskey/Brandy.

METHOD:
To make the fruit cake:-
1. Place the butter, sugar, fruit, orange zest, orange juice and whiskey into a large saucepan.
2. Bring to a slow boil, stirring until the butter has melted.
3. Remove from the heat and allow to cool for 30 minutes.
4. Preheat the oven to 130°C/265°F or in a fan oven to 110°C/230°F.
5. Line an 8”/20cm round deep cake tin with parchment paper.
6. When the fruit mixture is cool, stir in the egg, ground almonds and nuts. 7. You may chop the nuts up if you prefer them this way.
8. Stir in the flour and mixed spice and mix until fully combined.
9. Spoon the mixture into the lined cake tin and smooth the top out evenly with the back of a spoon.
10. Place a layer of parchment paper around the outside of the tin and secure it with some string. This will protect the side of the cake and the cake will bake more evenly.
11. Bake for 2½ to 3 hours, check the cake is done by inserting a skewer into the centre - if it comes out clean, then the cake is cooked.
12. Remove the cake from the oven and make holes in the warm cake with a skewer making sure the skewer goes all the way to the bottom.
13. Pour whiskey/brandy over the top of the cake.
14. Allow to cool completely before wrapping in parchment/greaseproof paper and then tinfoil.

STORAGE:
• Store in a cool dry place and feed with alcohol once a week.

NOTES:

The cake can be fed once a week with 3 tablespoons of alcohol. Make sure to alternate the top and bottom when feeding.
Orange juice can be used to feed the fruitcake but should only be used when the cake is made close to Christmas, as orange juice will not preserve it in the same way that alcohol does.
